White Bean Chicken Chili
Ingredients
- 4 chicken breasts (about 3 lbs)
- 3 Tablespoons vegetable oil
- 3 poblano chiles, seeds removed
- 3 Anaheim chiles, seeds removed
- 3 jalepeno chiles
- 2 medium onions
- 6 cloves garlic
- 1 Tablespoon ground cumin
- 1 1/2 teaspoons ground coriander
- 2 15-ounce cans cannellini beans, drained
- 4 cups chicken broth
- 1/4 cup minced fresh cilantro
- 4 green onions, sliced
- 3 Tablespoons fresh lime juice
- 1 Tablespoon fresh oregano
- 1 jalapeno, diced
Instructions
- Brown chicken 3 minutes each side in a large skillet on medium-high.
- Remove to cutting board and dice.
- Reserve 1 Tablespoon of oil and add to large pot.
- Pulse chiles and onions in food processor.
- Add chiles, onions, garlic, cumin, corriander, and salt.
- Cook 10 minutes in pot.
- Blend 1 cup chili mixture, 1 cup beans and 1 cup broth in a blender.
- Return to pot.
- Add broth and chicken.
- Cover and simmer 15 minutes.
- Rinse beans and add to pot.
- Season with salt and pepper and cook uncovered for 10 minutes.
- Add remaining ingredients.
