Italian Wedding Soup
Notes
Try baking the meatballs for 20 minutes at 400 degrees on a baking sheet with parchment paper instead of cooking them in the soup.
Ingredients
- 1 pound ground turkey
- 2 egg, beaten
- 1/3 cup breadcrumbs
- 2 Tablespoon Parmesan cheese
- 1 teaspoon dried basil
- 1 teaspoon onion powder
- 12 cups chicken broth or turkey bone broth
- 8 ounces chopped spinach
- 1 cup orzo pasta, uncooked
- 2 cups chopped carrots
Instructions
- Combine meat, egg, bread crumbs, Parmesan cheese, basil and onion powder in a medium bowl.
- Shape into meatballs.
- In a large stock pot, heat broth to boiling.
- Stir in spinach, carrots and meatballs.
- Return to a boil and then reduce heat to medium.
- Cook stirring frequently for 10 minutes.
- In a medium pot, heat water to a boil.
- Rinse and drain orzo, 1/2 cup per bowl.
- Boil orzo for 10 minutes.
- Place orzo in each bowl and pour soup on top.
