French Onion Soup
Ingredients
- 2 teaspoons olive oil
- 3 Maui onions, thinly sliced
- 2 red onions, thinly sliced
- 1/2 teaspoon sugar
- 1/2 teaspoon pepper
- 1/4 teaspoon salt
- 1/4 cup white wine
- 8 cups beef broth
- 1 teaspoon thyme
- French bread
- Sliced swiss cheese
Instructions
- Heat oil in a large pot over medium heat.
- Add onions and saute.
- Add sugar, pepper and salt.
- Saute until golden brown, 10-15 minutes.
- Add wine and saute another minute.
- Add broth and thyme.
- Reduce heat to low.
- Cover and cook for 2 hours.
- Toast slices of bread.
- Spoon soup into oven-proof bowls.
- Add bread.
- Cover with cheese.
- Bake at 450 until cheese is bubbly and golden brown.
