Wild Rice with Orange and Mint
Ingredients
- 6 cups water
- 1 cup wild rice, rinsed
- 1 Tablespoon olive oil
- 1 1/2 teaspoons salt
- 1 orange
- 1/8 teaspoon orange zest
- 2 Tablespoons olive oil
- 1 shallot, minced
- 1 Tablespoon red wine vinegar
- 2 teaspoons Dijon mustard
- 1 teaspoon honey
- 1 cup shredded carrots
- 1/4 cup fresh mint, chopped
Instructions
- Add water, rice, oil and salt to the Instant Pot
- Close pressure release valve
- Cook on high pressure for 15 minutes
- Natural release for 15 minutes
- Quick release remaining pressure
- Drain rice and set aside to cool
- Zest the orange enough for 1/8 teaspoon
- Peel the orange and cut into small wedges
- Whisk oil, shallot, vinegar, mustard, honey and orange zest in a large bowl
- Gently stir in rice, oranges, carrots and mint
