Sauteed Spinach and Mushrooms
Ingredients
- 1 pound baby spinach
- 2 Tablespoons olive oil
- 3 teaspoons minced garlic
- 8 ounces sliced mushrooms
Instructions
- Rinse spinach and mushrooms under cold water.
- Heat oil in a large nonstick pot over medium high heat.
- Add garlic and saute for 1 minute.
- Stir in mushrooms.
- Add spinach and stir until coated in olive oil.
- Cover and cook for 1 minute.
- Uncover and stir.
- Cover and cook for 1 additional minute.
- Drain excess liquid.
