Roasted Rainbow Carrots
Ingredients
- 3/4 pound rainbow carrots
- 1 Tablespoon melted butter
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
Instructions
- Preheat oven to 425 degrees
- Peel carrots and cut into uniform sticks
- Line a sheet pan with foil
- Toss all ingredients
- Spread carrots in a single layer on sheet pan
- Cover with foil and bake for 15 minutes on middle rack
- Remove foil
- Cook for an additional 30 minutes, stirring half way through
