Roasted Garlic Red Potatoes
Ingredients
- 1 1/2 pounds red potatoes
- 1/8 cup olive oil
- 3/4 teaspoons kosher salt
- 1/2 teaspoon black pepper
- 1 Tablespoon minced garlic
Instructions
- Preheat the oven to 450 degrees.
- Cut the potatoes into quarters.
- Toss potatoes, oil, salt, pepper and garlic.
- Spread in a single layer on a wire rack on a cookie sheet.
- Roast for 25 minutes.
- If not cooked all the way through, flip with a spatula and cook an additional 10 minutes.
