Roasted Fennel
Ingredients
- 1 pound fennel, quartered lengthwise
- olive oil
- kosher salt
- fresh ground pepper
Instructions
- Position rack in the center of oven and preheat to 475 degrees.
- Spray a baking sheet with cooking spray
- Trim the stalks from the fennel.
- Cut the base of the fennel into quarters, leaving the core intact to hold the layers.
- Brush a generous amount of olive oil on all sides of the wedges.
- Sprinkle with salt and pepper.
- Roast for 15 minutes at 475 degrees.
- Flip and roast an additional 10 minutes.
