Green Bean Mushroom Fricassee
Ingredients
- 1 pound green beans
- 24 baby carrots, halved lengthwise
- 1/3 cup pine nuts (about 2 ounces)
- 2 Tablespoons olive oil
- 6 ounces shiitake mushrooms, stemmed and sliced
- 3 plum tomatoes, peeled, seeded and thinly sliced
- 1 1/2 Tablespoons fresh lemon juice
- Salt and pepper to taste
Instructions
- Bring a large pot of salted water to a boil. Add beans and carrots and cook until crisp-tender, about 5 minutes. Drain and dry with paper towels.
- In a large skillet, toast the pine nuts over medium heat, stirring constantly. Cook about 5 minutes until lightly golden. Set aside.
- Heat oil in the skillet.
- Cook mushrooms over medium high heat for 5 minutes.
- Add carrots and green beans and cook 3 minutes.
- Add tomatoes, lemon juice, salt and pepper and cook 1 minute.
