Creamy Garlic Mashed Potatoes

If you don't have fresh parmesan cheese you can substitute half the amount with canned parmesan cheese.
Ingredients
- 2 pounds russet potatoes
- 1 Tablespoons kosher salt
- 1 cups half-and-half
- 3 cloves minced garlic
- 3 ounces grated fresh Parmesan cheese
Instructions
- Peel and dice potatoes.
- Boil potatoes and salt in a large pot.
- Reduce heat to a rolling boil.
- Cook 20 minutes.
- In a small saucepan, mix half-and-half and garlic.
- Heat over medium heat until simmering.
- Remove from heat and set aside.
- Drain and mash potatoes.
- Stir cream mixture and Parmesan cheese into potatoes.
- Let stand for 5 minutes for potatoes to thicken.
