Spaghetti Squash with Meat Sauce
Ingredients
- 1 spaghetti squash
- 1 Tablespoons olive oil
- 1 pound ground beef
- 1 onion, dice
- 3 cloves minced garlic
- 1 28-ounce can crushed tomatoes
- Parmesan cheese
Instructions
- Preheat oven to 450.
- Cut the squash in half along the length.
- Remove seeds and place cut side up on a baking pan.
- Brush with olive oil.
- Season with salt and pepper.
- Roast for 45 minutes.
- Let squash cool for 10 minutes.
- Use a fork to loosen the strands in the shells.

- Cook beef in a large pot for about 5 minutes.
- Add onions and garlic and cook for another 5 minutes.
- Add crushed tomatoes and bring to a simmer.
- Cover and let it simmer for 15 minutes, stirring occasionally.
- To serve, pour sauce over strands in the squash shell.
