Chicken Gouda Fettuccine
Ingredients
- 3 cups cooked chicken, cut into 1 inch pieces
- 16 ounces fettuccine
- 2 Tablespoons butter
- 8 ounces sliced mushrooms
- 1 cup half and half
- 8 ounces smoked gouda, shredded
- 1/4 cup Parmesan cheese
- 1 teaspoon minced garlic
- 1 cup bottled roasted red peppers, drained and sliced
- 10 ounces frozen chopped spinach
- 1/4 lb cooked and crumbled bacon
Instructions
- Boil chicken breasts and chop into 1-inch pieces.
- Thaw spinach.
- Cook and drain fettuccine.
- Melt butter in a medium saucepan over medium heat.
- Saute mushrooms.
- Add half-and-half, cheeses and garlic.
- Stir constantly until the cheese is melted.
- Stir in chicken, chopped spinach and bacon until warm throughout.
- Pour sauce over pasta and serve.
