Seared Tuna with Wasabi Butter

This recipe freezes well.
Ingredients
- 3 Tablespoons white vinegar
- 1 7/8 cups white wine (2 small bottles)
- 1 sliced shallot
- 1 1/2 Tablespoon wasabi paste
- 1 1/2 Tablespoon soy sauce
- 1 1/2 cup unsalted butter, melted
- 1 bunch fresh cilantro, chopped
- 1 1/2 Tablespoon olive oil
- 6 6-ounce fresh tuna steaks
Instructions
- Combine vinegar, wine and shallots in a small saucepan over medium heat.
- Reduce to about 3 Tablespoons.
- Strain out shallots and return to pan.
- Add wasabi and soy sauce.
- Reduce heat to low and add butter one cube at a time.
- Be careful not to boil.
- Stir in cilantro and remove from heat.
- Heat oil in a large skillet over medium-high heat.
- Sear tuna in olive oil for 1 1/2 minute per each side.
- Pour sauce over tuna before serving.
