Baked Cod in Foil Packets

Ingredients
- 1 tomato, cubed and seeded
- 2 green onions, chopped
- 1 Tablespoon olive oil
- 1 Tablespoon chopped fresh basil
- 1 clove garlic, minced
- 2 cod fillets
- 1 1/2 Tablespoons lemon juice
- salt and pepper
Instructions
- Place each cod fillet on a piece of aluminum foil
- Combine tomatoes, onion, oil, basil and garlic in a bowl
- Spoon mixture over fish
- Drizzle with lemon juice
- Season with salt and pepper
- Close the foil into a packet
- Bake for 20 minutes at 400 degrees
