Thumbprint Jam Cookies
Ingredients
- 1 cup unsalted butter, softened
- 2/3 cup granulated sugar
- 1 large egg yolk
- 1 teaspoon vanilla extract
- 2 1/4 cups flour
- 1/2 teaspoon salt
- 6 ounces jam
Instructions
- Beat butter and sugar on medium high until light and fluffy (about 2-3 minutes).
- Beat in egg yolk and vanilla extract.
- Add flour and salt and mix until incorporated and dough becomes a ball.
- Line a baking sheet with parchment paper.
- Form dough into 1 inch balls and arrange on a baking sheet.
- Make an indentation on the center of each ball.
- Fill each cookie with about 1/2 teaspoon of jam.
- Bake 14 minutes at 375 degrees until cookies are lightly golden and jam is slightly melted.
- Cool cookies on a wire rack.
