Boneless Fried Chicken Breasts
Ingredients
- 4 boneless skinless chicken breasts
- 1 1/2 cup crushed pork rinds
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried minced onion
- 1 teaspoon black pepper
- 2 large eggs
- 3 Tablespoons coconut oil
Instructions
- Combine pork rinds, Parmesan cheese, garlic powder, onion powder, minced onion, salt and pepper in a large mixing bowl.
- Whisk eggs in a small bowl.
- Dip each chicken breast into eggs and then coat with rind mixture.
- Set aside
- Heat coconut oil in a large skillet over medium-high heat.
- Add chicken breasts to pan and cook for 8 minutes.
- Flip chicken and cook an additional 7 minutes.
- Flip chicken and cover.
- Cook an additional 5 minutes.
