Mini Pumpkin Loaves
Ingredients
- 3/4 cup unsalted butter, softened
- 3 cups sugar
- 3 large eggs
- 3 cups flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon cloves
- 1/4 teaspoon nutmeg
- 1 cup chopped pecans
- 3/4 cup raisins
- 2 cups canned pumpkin
- 1 teaspoon vanilla
Instructions
- Beat butter on medium until creamy.
- Gradually add sugar.
- Add eggs one at a time.
- Combine flour and spices in a separate bowl.
- Alternate adding pumpkin and flour mixture.
- Stir in vanilla.
- Grease and flour loaf pans.
- Spoon batter into 6 loaf pans.
- Bake at 325 degrees for 45 minutes.
- Cool in pans on wire rack for 10 minutes.
- Remove from pan.
- Frost with cream cheese frosting after completely cooled.
