Instant Pot Corned Beef and Vegetables
Ingredients
- 2 1/2 to 3 1/2 pound corned beef brisket with spice packet
- 4-5 garlic cloves
- 4 cups water
- 2 pounds red potatoes, quartered
- 3 cups baby carrots
- 1/2 head green cabbage, cut into wedges
Instructions
- Rinse the roast well.
- Place roast, spice packet, garlic, and water in an Instant Pot.
- Cook on meat/stew setting for 90 minutes.
- Quick release the pressure.
- Remove roast and tent with foil.
- Add potatoes, carrots and cabbage to the liquid.
- Pressure cook at high pressure for 5 minutes.
- Quick release the pressure.
