Sweet and Sour Pork Tenderloin
Ingredients
- 2 pork tenderloins (about 2 pounds)
- 2 medium red onions
- 3 Tablespoons cold butter
- 2 Tablespoons olive oil
- 2 teaspoon salt
- 1 Tablespoon olive oil
- 5 Tablespoons honey
- 1 teaspoon crushed red pepper flakes
- 1 cup red wine vinegar
- 1/4 cup water
Instructions
- Dry tenderloins with a paper towel.
- Slice red onions and set aside.
- Cut butter into small pieces and chill.
- Heat 2 Tablespoons olive oil in a large skillet over medium-high heat.
- Sear tenderloins for 2 minutes on each side (8 minutes total).
- Set pork aside.
- Cook onions in 1 Tablespoon olive oil for 5 minutes, stirring occasionally.
- Mix honey, pepper flakes, salt, vinegar and water in a small bowl.
- Add to skillet.
- Return tenderloins to skillet and cook uncovered, keeping sauce at a low simmer.
- Cook meat for 15 minutes, or until temperature is 140 degrees, turning every five minutes.
- Transfer to a cutting board to rest and tent with foil.
- Continue to cook sauce for an additional 5 minutes until thick and syrupy.
- Remove from heat and stir in cold butter pieces.
- Slice tenderloins and drizzle with sauce and onions.
