Roasted Fingerling Potatoes
Ingredients
- 1 pound fingerling potatoes
- 2 teaspoons dried parsley
- 2 cloves minced garlic
- 2 Tablespoons grated Parmesan cheese
- 1 teaspoon lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 Tablespoons olive oil
- 1 Tablespoon butter
Instructions
- Preheat the oven to 425 degrees.
- Toss potatoes, garlic, cheese, lemon juice, salt, pepper, parsley and olive oil in a bowl.
- Melt butter in an oven proof skillet over medium-high heat until melted.
- Add potatoes and cook for 2 minutes.
- Move skillet to oven and cook for 10 minutes.
- Flip potatoes and cook another 10 minutes.
