Cranberry Stuffed Turkey Breasts
Notes
If cooking a large whole turkey with dark meat included, increase cooking time to 90 minutes.
Ingredients
- 1 6-oz box Stovetop Stuffing
- 2 skinless boneless turkey breasts
- 1/2 cup chopped pecans
- 8 oz dried cranberries
- 2 Tablespoons olive oil
Instructions
- Prepare stuffing mix and set aside to cool.
- With a sharp knife, debone and butterfly breasts open to lay flat.
- Place each breast between two sheets of waxed paper and flatten with a mallet.
- Spread the stuffing to within 1/4 inch of the edge of each breast.
- Sprinkle with chopped pecans and dried cranberries.
- Roll breasts tightly in a jellyroll style, starting with the long end.
- Tie with string every few inches.
- Tuck in ends and tie another string lengthwise.
- Preheat oven to 350.
- Heat olive oil and brown rolls in a large over-safe skillet.
- Place skillet in the oven uncovered and cook for 45 to 60 minutes, or until temperature is 170 degrees.
- Allow meat to rest for 15 minutes before slicing.
