Chicken Tortilla Soup
This traditional Mexican soup consists of chicken breast, vegetables, broth, tortilla chips and melted cheese. It’s a great hearty recipe for a cold winter day. Serve by itself or as an appetizer.
Ingredients
- 8 cups chicken broth
- 20 oz canned diced tomatoes with peppers
- 6 carrots, chopped
- 3 cups frozen corn, thawed
- 2 medium onions, chopped
- 16 oz canned tomato sauce
- 4 teaspoons chili powder
- 1 teaspoon ground cumin
- 1/4 teaspoon garlic powder
- 4 cups chopped cooked chicken
- shredded Monterey Jack cheese
- tortilla chips
Instructions
- Combine all ingredients except cheese and chips in a slow cooker.
- Cook on low for 6 hours.
- Top with cheese and chips when ready to serve.
