French Fries
Ingredients
- 5 large Russet potatoes, scrubbed
- 1 quart vegetable oil
- Kosher salt
Instructions
- Cut potatoes into french fries.
- Soak in a bowl of cold water in the refrigerator for 1 to 8 hours.
- Heat oil in an electric skillet to 325 degrees.
- Line a baking sheet with paper towels and set aside.
- Drain the fries well and dry with paper towels.
- Fry in batches for 4 minutes until pale and limp.
- Drain on the paper towels.
- Increase the temperature to 375 degrees.
- Fry in batches again for 4 minutes and remove to paper towels.
- Season with salt immediately.
