Easy Jambalaya
Ingredients
- 1 14.5-ounce can diced tomatoes, undrained
- 1 1/2 cups chicken broth
- 1 6-ounce can tomato paste
- 3 celery ribs, chopped
- 2 green peppers, chopped
- 1 onion, chopped
- 3 teaspoons parsley flakes
- 2 teaspoons dried basil
- 5 teaspoons minced garlic
- 1 1/2 teaspoon dried oregano
- 1 1/4 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon hot pepper sauce
- 1 pound chicken, cut into 1-inch cubes
- 1 pound smoked sausage, sliced
- 1 pound uncooked shrimp, peeled and deveined
- 1 sliced zucchini
Instructions
- In an electric pressure cooker, combine tomatoes, broth and tomato paste.
- Stir in celery, peppers, onion, garlic, seasonings, chicken and sausage.
- Lock lid and close vent.
- Pressure cook on high for 8 minutes.
- Quick release the pressure.
- After pressure has been released, stir in the shrimp and zucchini.
- Saute on high heat until shrimp turn pink.
- Serve over rice.
