Italian Sausage and Kale Soup
Ingredients
- 1 pound bulk Italian sausage
- 6 cups chopped fresh kale
- 2 15.5-ounce cans great northern beans, rinsed and drained
- 1 28-ounce can crushed tomatoes
- 4 large carrots, sliced
- 1 onion, chopped
- 3 teaspoons minced garlic
- 1 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 5 cups chicken broth
Instructions
- Saute sausage in an Instant Pot until browned.
- Drain sausage in a colander.
- Return sausage to pressure cooker.
- Add remaining ingredients.
- Lock lid and close vent.
- Pressure cook on high for 10 minutes.
- Allow natural release for 5 minutes.
- Quick release the remaining pressure.
