Chicken Fricassee
Ingredients
- 4 boneless, skinless chicken breasts
- 6 Tablespoons flour
- 1/2 teaspoon Italian seasoning
- 1/8 teaspoon black pepper
- 2 Tablespoons butter
- 1 can condensed cream of broccoli soup
- 1 can diced tomatoes, undrained
- hot cooked rice or pasta
Instructions
- Combine flour and seasonings.
- Cut chicken breasts into quarters and coat with flour mixture.
- In a large skillet over medium-high heat, melt butter.
- Cook chicken 5 minutes on each side.
- Add more margarine if necessary.
- Set chicken aside and remove fat from skillet.
- Add soup and tomatoes to skillet.
- Top with chicken pieces and bring to a boil.
- Reduce heat to low and cover.
- Cook an additional 5 minutes.
- Serve over rice or pasta.
