Caribbean Fudge Pie
Ingredients
- 1/4 cup butter, softened
- 3/4 cup brown sugar
- 3 eggs
- 1 package (8 squares) semi-sweet chocolate, melted
- 2 teaspoons instant coffee
- 1 teaspoon rum extract (or 1 Tablespoon dark rum)
- 1/4 cup flour
- 1 cup chopped walnuts
- 1 unbaked 9-inch pastry shell
- 1/2 cup walnut halves
Instructions
- Beat butter and sugar until fluffy.
- Add eggs one at a time.
- Add chocolate, coffee and rum and mix well.
- Stir in flour and walnuts.
- Pour into pastry shell.
- Decorate top with walnut halves.
- Bake in the bottom shelf for 25 minutes at 375 degrees.
- Refrigerate at least one hour before serving.
