Easy Minestrone
Ingredients
- 3 1/2 cups vegetable broth
- 1 15-ounce can red kidney beans, rinsed and drained
- 1 15-ounce can cannellini beans, rinsed and drained
- 2 14.5-ounce cans diced tomatoes, undrained
- 6 carrots, peeled and sliced
- 1 bunch green onions, chopped
- 3/4 teaspoon Italian Seasoning
- 12 ounces rotini pasta, cooked
- 10 ounces chopped spinach
Instructions
- In a slow cooker, combine broth, beans, tomatoes, carrots, onions and seasoning.
- Cook on low for 6 to 8 hours.
- Add spinach and cook an additional 15 minutes.
- Divide pasta between bowls.
- Ladle soup over pasta.
