Curried Chicken Squash Soup
Ingredients
- 2 Tablespoons olive oil
- 4 teaspoons curry powder
- 4 medium yellow squash, sliced
- 2 onions, chopped
- 6 cups chicken broth
- 2 15-ounce cans garbanzo beans
- 1/2 Tablespoon pepper
- 4 cups cooked chopped chicken
Instructions
- Heat oil and curry powder.
- Stir and cook until fragrant, about 30 seconds.
- Add squash and onion.
- Reduce heat to medium and cook 8 minutes.
- Add broth and garbanzo beans.
- Reduce heat to medium and bring to a boil.
- Remove from heat.
- Transfer 4 cups to a blender and puree.
- Return pureed soup to the pot.
- Add pepper and chicken.
