Chicken Ricotta
Notes
Try adding fresh basil or spinach leaves.
Ingredients
- 1 cup reduced fat ricotta cheese
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 4 boneless skinless chicken breast halves
- 1/2 teaspoon garlic powder
- 2 Tablespoons olive oil
- 1 cup crushed tomatoes
- 4 slices reduced fat mozzarella cheese
Instructions
- In a blender, combine ricotta, oregano, salt and pepper.
- Rub chicken with garlic powder.
- Heat oil over medium-high heat.
- Cook chicken 12 minutes per side.
- Preheat oven to 350 degrees.
- Place chicken in a 13 x 9 glass baking dish.
- Spoon 1/4 cup of cheese and 1/4 cup of tomatoes onto each chicken breast.
- Top each chicken breast with one slice of mozzarella.
- Bake for 20 minutes.
