Yankee Pot Roast
Notes
Try browning the meat and caramelizing the onions for more flavor.
Try adding mushrooms for more flavor.
Try adding tomato paste for more flavor.
Ingredients
- 2 1/2 pound beef chuck roast
- 2 potatoes, quartered, unpeeled
- 2 large carrots, peeled, sliced
- 2 ribs celery, sliced
- 1 medium onion, chopped
- 2 large parsnips, peeled, sliced
- 2 bay leaves
- 1 teaspoon dried rosemary
- 1/2 teaspoon dried thyme
- 1/2 cup beef broth
Instructions
- Add vegetables and spices to slow cooker.
- Trim fat from beef and cut into chunks.
- Add beef to slow cooker.
- Pour broth over beef.
- Cook on low for 8 hours.
