Beef and Bean Chili
Ingredients
- 1 Tablespoon olive oil
- 1 pound lean ground beef
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 1/2 teaspoons chili powder
- 1 28-ounce can diced tomatoes, with juice
- 1 15-ounce can kidney beans, rinsed and drained
- sour cream to garnish
- chopped green onions to garnish
Instructions
- Heat oil in a large saucepan over medium-high heat.
- Add beef, 1 teaspoon of chili powder and cumin.
- Saute for 5 minutes.
- Transfer beef to a small bowl using a slotted spoon.
- Add onion, garlic, and remaining chili powder to the same pan.
- Cook over medium heat for 3 minutes.
- Add tomatoes and beans.
- Cover and simmer for 10 minutes.
- Add cooked beef and cook uncovered for 5 minutes.
- Garnish with sour cream and green onions.
