Yams in Orange Cups
Ingredients
- 3 pounds yams
- 1/2 cup marshmallow creme
- 5 Tablespoons butter
- 3 Tablespoons maple syrup
- 2 eggs
- Marshmallow creme to garnish
- Pecans to garnish
Instructions
- Pierce yams with a knife.
- Microwave for 15 minutes.
- Turn yams over.
- Microwave for another 12 minutes.
- Cut yams in half and scoop pulp into a large bowl.
- Add marshmallow, butter, syrup and eggs.
- Mash until smooth.
- Cut a thin slice from the top and bottom of each orange to make a flat edge.
- Cut oranges in half.
- Scoop out pulp.
- Fill oranges with mashed yams.
- Garnish with marshmallow and pecans.
- Bake for 30 minutes at 350 degrees.
