Fresh Strawberry Pie
Ingredients
- Frozen pastry pie crust
- 1 1/2 quarts strawberries
- 1 cup sugar
- 3 Tablespoons cornstarch
- 1/2 cup water
- 3 ounces whipped cream cheese
Instructions
- Place pie crust in a glass pie dish.
- Bake until flaky according to instructions.
- Crush enough berries to fill 1 cup.
- Mix sugar and cornstarch in a sauce pan.
- Stir in water and mashed berries.
- Bring to a boil over medium heat, stirring constantly.
- Continue boiling and stirring for 1 minute.
- Cool.
- Spread cream cheese in pie crust.
- Fill shell with remaining berries.
- Pour berry mixture over the top.
- Refrigerate 3 hours before serving.
