Creole Chicken and Rice
Ingredients
- 2 Tablespoon canola oil
- 2 1/4 pounds chicken thighs
- 1/2 teaspoon salt
- 1/2 teaspoon thyme
- 1/2 teaspoon paprika
- 1/4 teaspoon pepper
- 1 1/2 stalked of celery, chopped
- 1/2 bell pepper, chopped
- 1/2 onion, chopped
- 2 cloves garlic
- 1 cup uncooked rice
- 1 can diced tomatoes, undrained
- 1/2 teaspoon hot sauce
- 1 cup water
Instructions
- Heat oil in a large skillet.
- Add chicken pieces, skin side down.
- Cook 5 minutes.
- Flip chicken over.
- Sprinkle with spices.
- Cook an additional 5 minutes.
- Remove chicken.
- Add celery, onions, peppers, and garlic.
- Cook 2 minutes.
- Add rice.
- Cook 2 minutes, stirring constantly.
- Add tomatoes, hot sauce and water.
- Bring to a boil.
- Add chicken.
- Reduce heat to medium low.
- Cover and simmer 20 minutes.
