Chicken Soup with Barley and Kale
Ingredients
- 1 Tablespoon olive oil
- 1/2 chopped onion
- 1/2 cup chopped carrot
- 1/2 cup chopped red bell pepper
- 1 cup chopped butternut squash
- 1 glove minced garlic
- 6 cups chicken broth
- 1/4 teaspoon corriander
- 1/4 teaspoon cumin
- 1/4 teaspoon tumeric
- dash cayenne pepper
- 2 cups cooked chopped chicken
- 1 cup cooked barley
- 4 cups finely chopped kale
Instructions
- Heat oil in a large non-stick saucepan or dutch oven.
- Cook onion, carrot, bell pepper, squash and garlic in hot oil over medium heat for 5 minutes, stirring frequently.
- Stir in broth, spices and chicken.
- Bring to a boil and reduce heat to medium-low.
- Cover and simmer 10 minutes.
- Add barley and kale. Cook for 2 minutes.
