Meatloaf
Notes
Use 1 cup of breadcrumbs to prevent the meat from falling apart.
Or maybe just let it rest for 10 minutes before serving?
Ingredients
- 1/2 medium onion, finely diced
- 1 teaspoon butter
- 2 eggs
- 3/4 cup milk
- 3/4 cup breadcrumbs
- 1 1/2 Tablespoon Italian seasoning
- 2 pounds lean ground beef (80/20)
- 1 Tablespoon ketchup
- 2 teaspoons dried parsley
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 cup barbecue sauce
Instructions
- Cook onions and butter over medium heat until tender.
- Put them in the refrigerator to cool.
- In a large bowl combine eggs, milk and breadcrumbs. Let the mixture sit for 10 minutes.
- Add the onions, ketchup and spices to the bowl and mix.
- Add the meat and mix until just combined. Don’t overmix or meatloaf will be too dense.
- Line a 9 x 13 metal cake pan with foil.
- Spray with cooking spray.
- Form a loaf on the pan (8″ x 4″) and bake for 40 minutes at 350 degrees.
- Remove loaf from oven and spread barbecue sauce over the loaf.
- Cook an additional 10 minutes.
- Allow the meatloaf to reset for 10 minutes before serving.
