Fruit and Nut Oatmeal
Notes
Try cooking for 2 minutes with a natural release to cut back on the mess.
Try putting something over the valve to cut back on the mess, but be careful it won’t melt.
Ingredients
- 2 cups steel-cut oats
- 8 cups water
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1 1/4 cup almond butter
- 1 1/4 cup ground flaxseed
- 1 cup chopped dried figs
- 1 cup chopped dried apricots
- 1 cup chopped walnuts
Instructions
- Rinse and drain the oats.
- Combine oats, water, cinnamon, vanilla and salt in an Instant Pot.
- Set the valve to seal.
- Pressure cook for 10 minutes at high pressure.
- Allow the pressure to naturally release.
- Stir in almond butter, flaxseed, figs, apricots and walnuts.
- Portions can be frozen in muffin cups.
