Mexican Rice
Ingredients
- 3 Tablespoons vegetable oil
- 2/3 cup diced onion
- 1 1/2 cups uncooked brown rice
- 1 cup chopped green bell pepper
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 12 ounces tomato sauce (1 1/2 cans)
- 1 teaspoon salt
- 1 clove minced garlic
- 3 cups water
Instructions
- Heat oil over medium-low heat in a large saucepan.
- Brown onions in the pan.
- Add rice and stir to coat with oil.
- Add the remaining ingredients.
- Bring to a boil, then cover and reduce heat to simmer.
- Cook for 30 to 40 minutes, until rice is tender, stirring occasionally.
